Being newly diagnosed with celiac disease (gluten intolerance), I was excited about Truly Free Bakery recently opening in Baton Rouge and claiming to be gluten free. However, having suffered through many a restaurant and store purchases claiming "safety" with my allergy, I was usually disappointed and I suffered from the aftereffects of cross-contamination. I was very wary and cautious. Through a friend, I met Erick and Ainsley Coughlin, and after recognizing their commitment to a healthy product line free of gluten, I took a chance, and I'm glad I did. I ordered my birthday cake from them, a gluten free, double chocolate layer cake- with icing!

Prior to making the cake, they took great care by reviewing with me all the ingredients and their manufacturers. They assured me there would be absolutely no cross-contamination during the baking process. Obviously, they were right, because for the first time since my diagnosis, I was able to "truly" enjoy my birthday cake! It was a masterpiece to behold - a moist and tasty chocolate cake that was beautifully decorated. I look forward to many more items from their bakery in years to come. - Judi C.


I am so excited to share with others the enjoyment I have rediscovered in eating treats. This past year, I found out I was allergic to dairy, gluten, and eggs-not severely-but to a point where it was a challenge to figure out what I was capable of eating. The frustrating part was that everything I normally ate, prior to knowing my allergies, was exactly what I was allergic to, therefore I had to change my entire diet from how I had eaten my whole life. My loving husband was determined to find a way for me to enjoy my occasional treats. He experimented over and over until he finally found a way to make me treats that I could safely enjoy :).

I am thrilled to be able to help those who have these
specific allergies, or even those people who want to eat their deserts in a
healthier way.
